Spinach, Bacon & Caramelized Onion Quiche with Sweet Potato Crust


  • 2 medium sweet potatoes washed and peeled

  • 1/2 package of Oscar Mayer Maple Bacon, cut up into pieces

  • 5oz fresh spinach

  • 1 garlic clove

  • 1 medium sweet onion, sliced

  • 1 Tbsp. butter

  • 4 eggs

  • 2 egg whites

  • 1/3 cup half and half

  • ¼ tsp. Salt, Pepper, Crushed Red Pepper

  • 8oz crumbled feta cheese

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Using a mandolin (for even slices) cut your sweet potato into equal sized slices. Spray a 9in pie pan with non-stick cooking spray and spread sweet potato slices evenly over the bottom in of the pie pan. To build up the sides of the pan, cut your sweet potato slices in half (half circles), and place cut side down along the sides of the pan. Repeat this process to overlap your sweet potato and form what will be the crust to your quiche. Spray the sweet potato crust with the same non-stick cooking spray and place in oven at 350 for 20 mins.

  3. While you bake your crust, prepare the rest of your ingredients. In a nonstick pan, cook the bacon pieces (about 8 slices). Cook the bacon on medium heat until completely crispy. Drain on paper towel. Remove some of the bacon fat in your pan, but not all!

  4. Add your spinach to the same pan (spinach shrinks with the heat) and sauté for several minutes on medium low heat until the spinach is cooked and wilted (may need to make two batches to fit all your spinach in the pan). I also added a diced clove of garlic about halfway through the spinach cooking process. Drain your spinach on a paper towel to remove excess moisture.

  5. Next, caramelize your onion. Place sliced onion into sauté pan with about 1 tbsp of butter. Remember there’s already leftover bacon fat in the pan so you may not need the butter.

  6. Stirring frequently on medium heat, caramelize your onion for about 15 mins until golden brown and slightly sweet. (This process is long so feel free to use a different pan from your bacon and spinach to speed up the process).

  7. Prep your egg mixture while onions are cooking. Crack 4 eggs and combine with your 2 eggs whites. Whisk until all combined. Add your spices and half n’ half and whisk thoroughly.

  8. Once your crust is done in the oven, all items should be prepped and cooled so you can start building the quiche. Turn oven heat up to 375 degrees Fahrenheit. In layers, add half the spinach, maple bacon, caramelized onion, one-third of the feta cheese and half of the egg mixture. Repeat this process to build up the quiche and add the remaining ingredients. Keep about one-third of the feta cheese to sprinkle on cooked quiche.

  9. Place quiche in oven at 375 and bake for 35 mins until cooked through. Let set on counter for about 10 mins before cutting into slices.

  10. Amazing! Sprinkle each piece with feta and enjoy!!

 

Oh my gosh! This quiche is so amazing! It's has so many flavors and textures going on and the sweet potato crust adds such a fun component to quiche! I truly love making quiche so it's fun to experiment with the different flavor combinations. More quiche to come!
