2 Tbsp. butter
2 medium onions or 1 large onion, sliced
1 tsp sugar
1 frozen pie crust
4-5 slices candied maple bacon, chopped into pieces (see recipe post below)
4 large Eggs
1/2 cup heavy cream
1/4 tsp salt and pepper
1 cup sharp cheddar shredded cheese
Melt the butter in a medium nonstick skillet over medium heat. Add the onions and sauté for 15-20 minutes. Sprinkle with the sugar and let the onions get golden and caramelized.
While the onions are cooking, preheat the oven to 350 degrees Fahrenheit. Take the pie crust out of the freezer to start thawing. Line a baking sheet with aluminum foil.
Whisk the eggs together, add the cream, salt and pepper and half of the cheddar cheese and whisk until all combined.
Once the onions are cooked, remove from heat to cool. In the bottom of the pie crust, add half of the onions, half of the bacon pieces, and then pour in the eggs and cream mixture. Add the remaining onions and bacon. Top with remaining cheddar cheese.
Top with aluminum foil being careful to leave plenty of room so the cheese doesn't touch the top of the foil, set on a baking sheet and put in the oven for 30-35 minutes.
Remove the foil, increase the heat to 400 degrees and finish baking for another 10-15 mins or until golden brown.
Take out of the oven and let slightly cool before cutting into. Enjoy!
I love quiche! I especially love making quiche on Sundays for meal prep so I can enjoy it for breakfast every day of the week.
