White Chicken Chili

  • 2 chicken breasts, diced

  • 1/4 tsp each of cumin, paprika, chili powder, thyme, salt, and pepper

  • 3-4 stalks of celery, diced

  • 2 carrots, peeled and diced

  • 1 onion, diced

  • 4-6 cloves of garlic, finely diced

  • 2 (32oz) containers of chicken broth (or your own homemade stock)

  • 1 (14.5oz.) can each of sweet corn and great northern beans, both drained and rinsed

  • 1 (14.5oz.) can each of rotel and chili hot beans

  • 1 (5 oz.) can of diced green chili peppers

  • Pack of spicy chili mix (about 1.5oz.)

  • 2 packs of ramen noodles, seasoning packet discarded (These noodles work so well in the soup - but they are completely optional)

  • 1/2 cup sour cream

  • 1/2 cup heavy cream

  1. Season the diced chicken with the thyme, cumin, paprika, chili powder, salt and pepper.

  2. Pour a tiny amount of olive oil into a large soup pot and turn the heat to medium high. Cook the chicken for 2-3 mins per side so it's mostly cooked through. Remove the chicken from the pan to a plate.

  3. Add the diced celery, carrot, and onion to the pot. Sauté for 5 mins or until the veggies are getting soft and fragrant.

  4. Add the diced garlic and sauté an additional 1-2 mins.

  5. Pour in the chicken broth or stock and then turn the heat up.

  6. Add the corn, great northern beans, rotel, chili hot beans, and diced chilies to the pot.

  7. Add your chili packet, I prefer the spicy but regular is fine! (I used Aunt Lizzie’s Spicy Chili Mix)

  8. Right as the soup comes to a boil, turn the heat down to low and then add the ramen noodles. Discard the seasoning packet.

  9. Add your cooked chicken back to the pot.

  10. Add the sour cream and heavy cream and stir to combine.

  11. Yum! I let mine sit on the stove for 15-30 mins to let flavors meld. Who am I kidding?! It’s usually in my bowl within 5 mins!

  12. Sprinkle with cheese, chopped cilantro, or I’ll even make my own homemade corn tortilla crisps! But that’s another recipe for another time.



















 

My favorite soup ever! This soup is so amazing, and actually won first place in a chili cook-off. Granted it was a friend competition, but it still won ;-)


Also something you may not know about me, is that I LOVE NOODLES! I totally understand that noodles don't traditionally go in white chicken chili, but with a noodle obsession like mine, I went for the gold with including ramen noodles in this recipe. Of course they are optional and you can leave them out if you don't have an obsession like me, but they are truly super delicious in this soup.
