Sweet Potato & Sausage Skillet

This breakfast skillet is a staple in our house - especially during the fall season! It is so delicious and really could be eaten any time of day if you want š Feel free to substitute dried herbs but fresh really do enhance the flavor so much. The conversion is generally 1 tablespoon of fresh herbs equals 1 teaspoon dried herbs.
Notes

Peel, slice and dice the sweet potatoes into small pieces. Add enough olive oil to coat each piece and then add the seasonings. Mix to ensure all pieces are evenly coated.

Add the seasoned potatoes to the air fry and cook for 15-20 minutes at 400 degrees, flipping halfway through.

While the sweet potatoes cook, brown the breakfast sausage over medium heat and season generously with salt and pepper.

While the meat is cooking, chop fresh rosemary and sage and add to the meat.

Once the meat is almost completely browned, add the maple syrup to start the caramelization process.

Spread the meat to the outside of the pan and add the butter to the middle.

Once the sweet potatoes are done cooking, add to the pan where the butter melted and stir to coat in butter.

Add the brown sugar and stir to combine everything together. Let it cook for a few more minutes until golden brown.

1 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon salt
